Pineapple Upside Down Cake
Hello friends! It has been too long. I hope everyone is as excited for 2018 as much as I am. After a lengthy break I am ready to come back swinging.
First things, first. Just so everyone is on the same page. My fella and I took a trip to Maui, Hawaii at the beginning of January. As you can see from the picture below it was a beautiful lush paradise. Needless to say I am pushing through a major bout of denial that I have to go to work, or even wear shoes in general for that matter. So for some instant nostalgia I decided to start off the new year by making a pineapple upside down cake. Something sweet and cozy that will remind me of all the fresh pineapple, ocean views, and fun adventures that we got to enjoy while we were over there.

Now lets talk about this cake! Honestly, I am a complete newbie to this whole upside down cake world. Which is so sad, if I only knew how tangy, sweet, and oh so comforting it is, I would have tried it way earlier! It opens up a wide new world of fruit combinations. Plums, cherries, peaches, maybe even some strawberries. If anyone has any tried and true upside down cake/fruit flavors I would love to hear about them. In the meantime, I'm going to sit back with a slice of this cake relax and pretend I'm somewhere on a beach.
